Banana Bread

2 cups flour
1 tsp baking soda
1/2 tsp salt
1/2 cup butter or margarine (or 1/4 c. butter & 1/4 c. apple sauce)
1 cup granulated sugar
2 eggs, beaten
1 cup bananas, mashed (about 2 bananas)
1/3 cup milk
1 tsp lemon juice
1 tsp vanilla extract (Penzeys!)
1 tsp black walnut extract (optional, since I can't find any)
1 tsp Penzey's apple pie spice (or cinnamon, nutmeg, mace & cloves)
1/2 cup raspberry chocolate chips
1/2 cup coconut
1/2 cup pecans, chopped
In one bowl, sift together flour, salt and soda.
In another bowl, cream the butter, sugar, eggs and banana
Combine milk and lemon juice.
Add dry ingredients to creamed mixture.
Add milk mixture, mix well.
Add extracts and mix well.
(Now, at this point, I usually pour 1/2 the batter into one loaf pan since there are usually folk who either don't like or can't eat nuts or coconut. That simply makes the other loaf even, um, nuttier.)
Add chips, coconut and nuts (to entire batter or to remaining half of batter).
Pour into two (or one more) greased loaf pans.
Bake 60-70 minutes in 350 degree oven.
If using smaller loaf pans, check at about 35-40 min.
Bake until toothpick comes out clean.
